Red Velvet Espresso Brownies

Ingredients

  • 1/2 cup butter
  • 4 oz. semi-sweet chocolate squares
  • 1 cup plus 1/2 cup white sugar
  • 1 tsp plus 1 tablespoon vanilla extract
  • 3 eggs
  • 2 tablespoons red food coloring
  • 3/4 cup plus 1 tablespoon flour
  • 2 tablespoons instant espresso powder
  • 8 oz. cream cheese

Directions

  1. preheat oven to 350

  2. melt butter and chocolate in the microwave for 60-90 seconds

  3. stir and add 1 cup white sugar and 1 tsp vanilla extract

  4. allow to cool, then add 2 eggs

  5. add red food coloring, 3/4 cup flour, and the espresso, stir gently

  6. remove 1 cup of the brownie batter, set aside

  7. for the cream cheese layer, cream together the package of cream cheese, 1 tablespoon vanilla extract, and 1/2 cup white sugar

  8. cream in one egg, then 1 tablespoon flour until light and fluffy

  9. line 8×8 plan with foil, spray with non-stick baking spray

  10. spread brownie batter, then layer cream cheese mixture, then swirl additional brownie batter on top

  11. bake at 350 degrees for 30 minutes, or until toothpick inserted into center comes out mostly clean
