Roasted Sweet Potatoes, Onions and Sausage

Ingredients

  • 2 large sweet potatoes, peeled and cut in 1-inch chunks
  • 2 medium Vidalia onions, cut in 1-inch chunks
  • 1 lb mild Italian sausage, casing removed
  • 3 tablespoons olive oil
  • 1/4 cup amaretto liqueur
  • 1 tsp dried thyme
  • salt and pepper
  • 1/4 cup sliced almonds

Directions

  1. Heat oven to 425 degrees

  2. toss sweet potatoes, onions, olive oil, liqueur, thyme, and salt and pepper in a shallow, medium-sized baking dish

  3. cover and bake 30 minutes

  4. meanwhile, brown sausage in skillet, crumble

  5. pour browned sausage into potato mixture

  6. sprinkle with almonds

  7. continue to bake, uncovered, 20 minutes more

  8. **Can also omit sausage
