Al’s Pico de Gallo

Hand chopping gives a better consistency, but you could throw all the ingredients except the limes into a food processor.

Ingredients

  • 8-10 Roma Tomatoes
  • 4 Anaheim Peppers
  • 3 Bunches green onions
  • 1 Bunch of Cilantro
  • 2 Limes
  • Salt and Pepper

Directions

  1. Chop first four ingredients into 1/4" pieces.

  2. Mix first three ingredients in a bowl.

  3. Add enough of the cilantro to get the right color (about 1/2 of the bunch)

  4. Heat the limes for 30 seconds in a microwave and juice with tongs into the bowl.

  5. Add salt and pepper to taste. Taste test on chips so that you have the salt from the chips too.
