English Breakfast Turkey Burger

Ingredients

  • 1 pound lean ground turkey
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon fennel seed
  • 2 ounces Stilton cheese, crumbled
  • 1/2 teaspoon freshly ground black pepper, cooking spray
  • 4 large eggs
  • 4 whole wheat English muffins, toasted
  • 4 teaspoons Dijon mustard
  • 2 ounces watercress
  • 1 teaspoon chopped fresh flat leaf parsley

Directions

  1. Heat a grill or grill pan over medium. Meanwhile, in a medium bowl, combine ground turkey, Worcestershire sauce, fennel seed, Stilton, and 1/2 teaspoon pepper. Divide into four equal portions and form into patties.

  2. Cook burgers for 5 minutes per side or until a thermometer inserted into the center reads 165 degrees. Remove from heat and set aside.

  3. Meanwhile, heat a nonstick pan over medium law. COat with cooking spray, then cook each egg sunny-side up.

  4. Coat the bottom half of each English muffin with 1 teaspoon Dijon mustard. Divide watercress evenly among all four and top each with a turkey burger and an egg. Sprinkle with parsley and pepper to taste an dcover with muffin tops.
