Chicken Pot Pie

needs refrigerated pie crust and cooked chicken

Serves 6 people

Ingredients

  • 1/4 cup butter
  • 1/3 cup chopped green onions
  • 1/3 cup flour
  • 4 cups chicken broth
  • 3 cups shredded cooked chicken
  • 1 cup frozen mixed vegetables
  • 1 tsp minced fresh thyme
  • salt and pepper
  • 1 refrigerated pie crust
  • 1 egg yolk
  • 1 Tbl milk

Directions

  1. Preheat oven to 375

  2. In a saucepan, over medium-low heat, melt butter and add onions, cooking until tender, about 3 minutes.

  3. Add flour and cook, stirring, for 2 minutes. Whisk in chicken broth, bring to a boil, and simmer until slightly thickened, about 5 minutes.

  4. Add chicken and frozen vegetables, thyme and salt and pepper to taste.

  5. Pour mixture into deep baking dish.

  6. Roll out pie crust and place over the chicken mixture.

  7. Seal edges and cut 4 slits into the crust to vent steam.

  8. In small cup, whisk together egg yolk with milk, then brush over the crust.

  9. Bake about 25 minutes, until crust is golden brown and juices are bubbling.
