Ingredients

  • 1 large parsnip
  • 1/2 cup broccoli florets
  • 1 1/4 cups milk

Directions

  1. Trim and peel the parsnips, rinse in cold water and chop.

  2. Place parsnips in a pan with the milk; bring to a boil, then cover and simmer for 10 minutes.

  3. Rinse and chop the broccoli; add to pan and simmer for 10 minutes more.

  4. Mash or puree; use refrigerated portions within 24 hours.
