Chocolate Peanut Butter Breakfast Bars

Ingredients

  • 1.5 cups GF rolled oats
  • 1/4 cup flax seed meal
  • ⅛ cup chia seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup sesame seeds
  • ⅓ cup pumpkin seeds
  • 1/2 cup cashews
  • 1/2 cup almonds
  • 1/4 cup agave nectar
  • 1 cup natural peanut butter (or nut butter of choice – I used almond butter)
  • 1/2 cup vegan chocolate chips (or dried fruit)

Directions

  1. Line 8×8 pan or pie dish with parchment paper. Leave extra on sides to use as handles later.

  2. In large bowl, combine oats, flax, seeds, nuts and chocolate. Mix thoroughly.

  3. Add agave. Stir until well coated.

  4. Add peanut butter and mix until well combined.

  5. Scoop misture into prepared dish and press firmly until it is evenly distributed.

  6. Put in freezer for an hour or so. Then cut into squares. Store in freezer, with parchment paper between bars to prevent bars from sticking together.
