Applesauce Cake

Ingredients

  • 1-1/2 lbs apples, peeled, cored and quartered
  • 2-1/4 cups sugar
  • 1T water
  • 3 cups flour
  • 1-3/4 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp cloves
  • 1-1/4 cup walnut pieces, chopped
  • 1 cup raisins
  • 1 cup butter at room temp
  • 1 tsp vanilla
  • Icing:
  • 1 cup powdered sugar
  • 1/4 tsp van extract
  • 2-3 T milk

Directions

  1. Combine apples, 1/4 cup sugar, and water in a saucepan and bring to a boil. Simmer 25 minutes, stirring occasionally to break up lumps. Let cool.

  2. eheat oven to 325. Butter and flour a 1-1/2 to 2 quart bundt or tube pan.

  3. Sift the flour, baking soda, cinnamon, and cloves into a mixing bowl. Remove 1/4 cup of the mixture to a small bowl and toss with 1 cup of the walnuts and raisins.

  4. With an electric mixer, cream the butter and remaining sugar together until light and fluffy. Fold in applesauce.

  5. Fold the flour mixture into the applesauce mixture. Stir in the vanilla and raisin-walnut mixture.

  6. Pour the batter into the prepared pan. Bake until toothpick comes out clean, about 1-1/2 hours.

  7. Let cool in the pan on a wire rack for 20 minutes, then unmold the cake from the pan onto a wire rack and let cool completely.

  8. Mix the icing and poor on cake. Let sit 2 hours for icing to harden.
