Potato Corn Chowder

Ingredients

  • 6 Medium Potato's (any kind)
  • 1 Lg Yellow Onion
  • 10 Bacon slices
  • 2 Cups Frozen Corn
  • 1 1/2 Cups Chopped Carrots
  • 2 14oz Cans Chicken Broth
  • 6 Tbsp all purpose flour
  • 3 Cups 2% Milk
  • 4 tbsp butter
  • 1 tsp chopped garlic
  • 1 tsp tyme
  • 2 tsp parsley flakes
  • 2 tsp salt
  • 1/2 tsp black pepper

Directions

  1. Crisp the bacon, pat off all grease, chop into 1/4" squares. Set aside.

  2. In a 6 Qt Pot, melt butter, add chopped onions, add garlic, add Parsley. Saute for 10 min.

  3. In same pot, now add 2-cans chicken broth, cleaned skin-on diced potato’s, frozen corn, chopped carrots, bacon pieces, and remaining seasonings, gently boil for 15 minutes with lid on.

  4. Thicken in two passes. First, use 3 Tbsp flour and 1 1/2 cups milk combined in a shaker. Slowly add this to the mixture, stirring CONSTANTLY. Second, repeat.

  5. Simmer for another 15 minutes (or longer) and serve.
