Maple Pecan Refridgerator Cookies

Ingredients

  • 1 cup softened butter
  • 1/2 cup sugar
  • 3 tablespoons real maple syrup (not pancake syrup)
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon maple extract
  • 2 cups flour
  • 1 1/2 cup chopped pecans

Directions

  1. Beat butter for 3 minutes, or until creamy.

  2. Beat in sugars gradually.

  3. Add syrup, egg yolk, and extracts.

  4. Beat well.

  5. Stir in flour and pecans.

  6. Divide dough in half.

  7. Shape into logs.

  8. Wrap in plastic wrap or parchment paper.

  9. Refridgerate until firm.

  10. Preheat oven to 350 degrees.

  11. Cut logs into 1/2" thick slices.

  12. Arrange on greased cookie sheets.

  13. Bake for 18 to 20 minutes, or until golden brown.
