Pumpkin Spice Sugar Cookies

Ingredients

  • 2 sticks (1cup) butter
  • 1 1/2 cups powered sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 3/4 cups all purpose flour
  • 1 tsp baking soda
  • 2 teaspoons pumpkin pie spice

Directions

  1. Combine flour and baking soda; set aside.

  2. In a large bowl, with an electric mixer at med speed, beat butter, 1 1/2 cup powered sugar, pumpkin pie spice, and vanilla until creamy. Add egg; beat for 1 minute. Gradually stir in four until bended. Chill dough for 2 hours.

  3. Roll out the dough on lightly floured surface to a 1/4 in thickness. Using cookie cutters, cut dough into desired shapes; transfer to prepared baking sheets.

  4. Bake at 375F for 8 to 10 mins or until lightly browned. Transfer to wire rack and let cool.

  5. Decorate cookies with icing as desired. Let cookies stand until decorations are set. Wrap ad store at room temperature for up to one week.
