Chewy Date Squares

Ingredients

  • 3 tbsps butter
  • 1 cup chopped, pitted dates
  • 1 tbsp water
  • 4 tbsps packed brown sugar, divided use
  • 3 tbsps coarsely chopped pecans or walnuts
  • 1/2 cup light corn syrup
  • 1 tsp vanilla extract
  • 6 cups multigrain or bran flakes cereal, crushed to 4 cups

Directions

  1. Lightly spray a 9×9×2 inch square baking pan with non-stick cooking spray; set aside.

  2. In a medium saucepan, combine the butter, dates, water and 3 tbsps of the brown sugar. Cook over medium heat, stirring constantly until mixture is the consistency of soft paste. Remove from heat. Stir in the nuts; set aside.

  3. In a large saucepan, heat the corn syrup and the remaining 1 tbsp brown sugar over medium heat; stirring constantly until the mixture comes to a rolling boil. Boil 1 min. Remove from heat; stir in vanilla. Add the cereal & mix until well blended.

  4. Using a square of wax paper, press half the mixture evenly and firmly into prepared pan. Spread evenly with date mixture. Press remaining cereal mixture evenly over date layer, pressing lightly. Cool completely. Cut into 16 bars. Store in covered containers between layers of wax paper.
