Cookies & Cream Bars

Ingredients

  • 28 creme filled chocolate sandwich cookies
  • 1/4 cup (1/2 stick) butter
  • 1/3 cup milk
  • 1 4 serving size pkg vanilla instant pudding and pie filling
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 1 oz squares semisweet baking chocolate, coarsely chopped

Directions

  1. Lightly spray a 9×9×2 inch pan with nonstick cooking spray; set aside.

  2. Finely crush 20 of the cookies; set aside. Coarsely crunch the remaining 8 cookies; set aside.

  3. In a large microwavable bowl, microwave the butter on high for 30 seconds or until butter is melted. Add the finely crushed 20 cookies; mix well. With a large square of wax paper, press crumb mixture onto bottom of prepared pan.

  4. In a small microwavable bowl, microwave the milk on high for 1 min or until very hot. Whisk in dry pudding mix, powdered sugar and vanilla extract until well blended. Pour over crust, spread. Sprinkle with reserved coarsely crushed cookies.

  5. Place the chopped chocolate squares in a small microwavable bowl. Microwave on high 45 seonds; stir until chocolate is completely melted. Drizzle melted chocolate over pudding mixture. Refrigerate for 1 hour or until set. Cut into 20 bars. Store in covered containers between layers of wax paper.
