Cream of Broccolli soup

Serves 6 people

Ingredients

  • 2 cups chopped broc. florets
  • 1 onion
  • 4 cups chicken broth
  • 2 cups milk
  • 4 Tablespoon butter
  • 1/2 cup flour
  • salt & pepper to taste

Directions

  1. Simmer brocc. & chopped onion in broth in lg. pot, at least a 5 qt. 10 – 12 min.

  2. In a seperate 3 qt. pot melt butter.

  3. whisk in flour untill untill well mixed.

  4. whisk in in milk slowley.

  5. cook till it begins to thicken & then whisk into the brocc. mixture in big pot.

  6. simmer for about 5 – 10 minutes longer & enjoy!
