Cauliflower and Parmesan Macaroni

Ingredients

  • 1 1/2 tbsp salt
  • 2 cups macaroni
  • 1 head cauliflower, florets separated
  • 1 cup half-and-half cream
  • 2 cups finely grated Parmesan

Directions

  1. Bring a large pot of water to a boil (with a steamer compartment on top).

  2. Add salt and cook pasta until tender while steaming cauliflower over the boiling water.

  3. Transfer the pasta to a bowl and the cauliflower to a blender.

  4. eat oven to 400.

  5. Puree cauliflower with the half-and-half cream until smooth.

  6. Add to the pasta along with 1 3/4 cups Parmesan; combine thoroughly.

  7. Pour into a casserole dish and sprinkle with the rest of the Parmesan.

  8. Cover with foil and bake for 20 minutes.

  9. Remove foil and bake for 5 more minutes until brown on top.
