Ann Jensen’s Tuna or Ham Salad

Mom made this with a meat grinder she attached to the kitchen counter. Tuna or ham may be used. Serves: a big family!

Serves 5 people

Ingredients

  • 2-6oz cans tuna
  • 3 pieces celery, minced
  • 4 sweet pickles, minced (she used Aunt Jane's)
  • 4T sweet pickle juice
  • 3T salad dressing (Miracle Whip, or mayonnaise
  • 3 large, hard boiled eggs

Directions

  1. Grind (or mash together) pickles, celery, and eggs. Drain oil (water) from tuna, separate and add to mixture. Let set for two hours before serving on toast or as a salad served on lettuce.

  2. Ham variation: Put 2-3 cups of chopped ham through grinder (food processor?). Add other ingredients as above.
