Pepper & Cheese Appetizer

Ingredients

  • 1 jar ( 12 oz) jalapeno peppers, drained
  • 8 oz each of the following cheeses, shredded
  • o Swiss
  • o Monterey jack
  • o Cheddar
  • o or use 24 oz of the Mexican Blend
  • 8 eggs, beaten

Directions

  1. Preheat oven to 350 degrees

  2. Grease or spray a 9 × 13 pan

  3. Lay peppers in single layer in bottom

  4. Mix all the cheeses together (total 24 oz) and spread evenly over the peppers

  5. Pour eggs over cheese as evenly as possible

  6. Bake 45 minutes

  7. Slice and serve while warm. Serve with salsa if desired.
