Creamy Cheesy Potatoes

Non-baked cheesy potatoes

Cook time: 30 minutes
Serves 4 people

Ingredients

  • 3 lb. potatoes peeled and cut into1/2” cubes
  • 4 T. butter
  • 4 T. flour
  • 2 1/2 C. milk
  • 1/2 C. heavy cream
  • 2 C. shredded cheddar cheese
  • Salt & pepper to taste
  • 2 T. chopped chives or parsley, optional

Directions

  1. Place potatoes in a large pot of heavily salted water. Bring to a boil, then simmer until tender, about 15 minutes. Drain and return to pot.

  2. In a medium pan, melt butter over medium-high heat. Add flour and make a roux by whisking rapidly. Once the butter and flour are combined, add milk in a slow stream, whisking constantly. Simmer, stirring, until mixture begins to thicken, 4-5 minutes. Add cream and continue to stir until the sauce thickens a bit more, add the cheese and stir until it melts. Remove from heat and season with salt to taste.

  3. Pour sauce over potatoes and stir gently to coat potatoes in sauce. Garnish each serving, if desired, with chives or parsley.
