Irish Rover’s blue cheesecake

Ingredients

  • 3/4 cup toasted breadcrumbs
  • 3/4 cup finely chopped toasted walnuts
  • 3 tablespoons unsalted butter, melted
  • 1 pound blue cheese crumbles, room temp
  • 1 pound cream cheese, room temp
  • 4 eggs
  • 1 clove garlic, minced
  • 1 tablespoon finely chopped rosemary
  • Salt
  • Black pepper

Directions

  1. oven to 350.

  2. In food processor, combine breadcrumbs, nuts and melted butter, and process thoroughly. Press mixture along bottom and partway up the sides of 8-inch springform pan.

  3. Combine blue cheese and cream cheese, and beat until smooth. Add the eggs, one at a time, beating well and scraping the sides of the bowl after each addition. Add garlic, rosemary, salt and pepper. Pour the mixture into the prepared pan, and bake 45 minutes to 1 hour, until golden brown and set in middle. Serve warm.
