Oatmeal Cinnamon Waffles

Ingredients

  • 1-3/4 cups whole wheat flour
  • 1 Tbs baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1-3/4 cups low-fat milk
  • 1/2 cup butter, melted
  • 2 cups quick-cooking rolled oats
  • 2 Tbs cinnamon
  • 2 Tbs packed light brown sugar
  • 2 Tbs veggie oil

Directions

  1. Preheat waffle iron. In large bowl combine flour, baking powder, and salt. In a medium bowl mix eggs, milk and butter then add to flour mixture and stir until just combined (batter will be a bit lumpy). Add oats, cinnamon, and sugar and mix just until combined.

  2. Brush waffle iron with oil, pour in waffle batter and bake.
