Mom’s Potato Salad

Serves 8 people

Ingredients

  • 8 potatoes
  • 4 hardboiled eggs, chopped
  • 3 stalks celery, chopped
  • Green pepper, chopped
  • Small onion, chopped
  • Sauce:
  • 1+ cup Miracle Whip
  • 3 teaspoons mustard
  • Approximately 1 teaspon sugar
  • Salt to taste

Directions

  1. Boil potatoes until tender, but not mushy.

  2. Combine cooled potatoes, eggs, green pepper and onion.

  3. Add sauce mixture and mix well.

  4. Refrigerate at least 1 hour
