Buttermilk Pancakes

Can substitute equal quantities of milk and yoghurt in place of buttermilk.
Nice served with:
lemon juice & sugar
caramel sauce & sliced bananas
maple syrup

Ingredients

  • 1 C self raising flour
  • 1/4 t bicarbonate of soda
  • 1/4 C caster sugar
  • 1 1/4 C buttermilk (or yoghurt/milk - see above)
  • 1 egg

Directions

  1. Sift flour & bicarb of soda into bowl, add sugar.

  2. Make well in centre.

  3. Whisk buttermilk and egg.

  4. Stir gently into flour mixture, to just incorporate.

  5. Cook spoonfuls onto oil sprayed and heated pan, spread out to desired size.

  6. Cook 2 minutes then turn over and cook second side approx 1 minute, until cooked through.
