Southwestern grilled pork tenderloin

Ingredients

  • 2 Tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 3/4 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 2 1 pound pork tenderloins
  • flour tortillas, salsa and avocado (optional)

Directions

  1. Combine chili powder, cumin, garlic powder, oregano, salt and cayenne in small bowl.

  2. Rub over pork and chill 2 hours.

  3. Coat grill rack with nonstick cooking spray.

  4. Preheat grill to medium high heat (350 degrees to 400 degrees.

  5. Grill pork, covered, 8 to 10 minutes per side or until instant-read thermometer registers 165 degrees for well-done.

  6. Let pork stand 5 minutes.

  7. Slice pork and serve on tortillas with salsa and avocado, if desired.
