Grapefruit and Avocado Salad

  • 2 Florida pink grapefruit, divided
  • 1/4 cup white vinegar
  • 3 tablespoons honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon vegetable oil
  • 5 cups mixed salad greens
  • 1/2 ripe avocado, peeled, pitted and cut into 1 inch cubes


  1. Peel 1 grapefruit and cut into sections; discard pith.

  2. Peel remaining grapefruit; reserve half.

  3. Cut remaining grapefruit from half into sections; discard pith.

  4. Squeeze juice from reserved grapefruit half into small bowl.

  5. Whisk together grapefruit juice, vinegar, honey, salt and pepper.

  6. Add oil, whisking constantly until blended.

  7. Place salad greens on a serving platter or in large bowl.

  8. Arrange grapefruit sections over greens.

  9. Sprinkle with avocado and drizzle with dressing.

  10. Serve immediately.
