Apple Scotchies

Ingredients

  • 9 tbsp butter, softened, divided use
  • 1 cup butterscotch baking chips, divided use
  • 1 tsp vanilla extract
  • 2 1/2 tbsps milk
  • 1/3 cup firmly packed light brown sugar
  • 2 cups graham cracker crumbs
  • 1/2 cup finely chopped pecans
  • 1 cup very finely chopped dried apples
  • 2 cups powdered sugar, sifted
  • 1 3 oz pkg cream cheese, softened

Directions

  1. Lightly spray a 9×9×2 inch pan with nonstick cooking spray; set aside.

  2. In a medium saucepan, melt 8 tbsps (1 stick) of butter with 1/2 cup of the butterscotch chips. Remove from the heat and stir in the brown sugar, graham cracker crumbs, dried apples and pecans. Press mixture into prepared pan with a large square of wax paper. Chill for 1 hour.

  3. In a medium bowl, blend the powdered sugar, cream cheese, milk and vanilla extract with an electric mixer set on medium speed until mixture has a icing like consistency; spread over the chilled bars. Chill for 30 mins.

  4. Melt the remaining 1 tbsp butter with the remaining 1/2 cup butterscotch chips, stirring until mixture is smooth. Spread or drizzle over the top of the bars. Chill for 1-2 hours. Cut into 16 squares by dipping a sharp knife in hot water and let it melt through the butterscotch. Store in covered containers between layers of wax paper.
