Peanut Butter Cream Crunch Bars

Ingredients

  • 1 cup sugar
  • 1 cup light corn syrup
  • 2 cups creamy peanut butter
  • 3 cups Rice Krispies
  • 3 cups Corn Flakes
  • 1 1/4 cups (2 1/2 sticks) butter, divided use
  • 4 cups sifted powdered sugar
  • 2-4 tbsps milk
  • 2 4 serving size pkgs instant vanilla pudding mix
  • 1 12 oz pkg white chocolate chips (2 cups)

Directions

  1. Lightly spray a 15×10×1 inch jelly roll pan with nonstick cooking spray; set aside.

  2. In a large saucepan, heat the sugar and corn syrup just until the mixture boils on the edge of the pan. Cook and stir 1 min; remove from heat. Stir in peanut butter until melted and blended. Stir in Rice Krispies and Corn Flakes until coated. With a large square of wax paper, press into bottom of prepared pan; set aside.

  3. In a medium saucepan, melt 3/4 cup (1 1/2 sticks) of the butter. Stir in powdered sugar, vanilla pudding mixes and enough of the milk to make spreading consistency; spread over cereal layer; set aside.

  4. In a small saucepan, heat the white chocolate chips and remaining 1/2 cup butter over low heat, stirring constantly until melted. Spread over pudding layer. Cover and chill in refrigerator for at least 1 hour or until set. Cut into 64 bars. Store in covered containers between layers of wax paper.
