Black Beans Ole

Ingredients

  • 1 tbsp vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1.5 tsp ground cumin
  • 0.5 tsp dried oregano
  • 1 tbsp finely chopped hot chiles (optional)
  • 1 c. chopped tomatoes
  • 2 cans (19 oz) black beans, drained and rinsed
  • 0.25 c. red wine
  • salt and pepper

Directions

  1. In large saute pan, heat oil over medium heat and add onion, garlic, spices and chiles. Saute mixture until onions become soft and translucent. Stir in tomatoes and cook an additional 3-4 mins.

  2. Add black beans and wine, cooking until beans become very soft and begin to break up. This should take about 10 mins. Season with salt and pepper.

  3. Beans will keep in fridge for 5 days. To soften beans for spreading, reheat in microwave, or over low heat on stove top.
