Warm sweet potato, blue cheese and prosciutto salad

Ingredients

  • 400g sweet potato, cut into 3cm chunks
  • 3 tbsp olive oil
  • 80g trimmed fine green beans
  • good splash of balsamic vinegar
  • 50g thinly sliced prosciutto or smoked streaky bacon
  • 50g green salad leaves, washed
  • 50g blue cheese, such as Gorgonzola or Roquefort
  • 25g pine nuts, toasted (optional)

Directions

  1. Preheat the oven to 200˚C/fan 180˚C/gas 6.

  2. Place the sweet potato on a baking tray, drizzle with 1 tablespoon of the oil and season. Bake for 25-30 minutes, turning halfway through, until tender.

  3. Meanwhile, blanch the beans in boiling salted water for 1 minute, drain and set aside. Whisk the remaining oil together with the vinegar and season.

  4. Spread the prosciutto or bacon onto a baking tray and cook in the oven for 5 minutes or until crisp. Break into shards and set aside. Divide the salad between 2 serving plates. Toss the cooked sweet potato and beans together with the dressing, place on top of the salad and crumble over the blue cheese. Top with prosciutto or bacon and pine nuts, if using.
