Quinoa Salad with Dried Cranberries and Avocado

Ingredients

  • Salad:
  • 1 cup raw quinoa
  • 1 (11oz) can Mandarin Oranges
  • 1/3 cup diced red,yellow, or orange bell pepper
  • 1/3 cup dried cranberries
  • 1/2 cup diced red onion
  • 1 avocado, diced
  • 2/3 cup chopped pecans
  • Dressing:
  • 3 tbsp vegetable oil
  • 3 tbsp white wine vinegar
  • 2 tbsp juice from Mandarin orange can
  • 2 tsp Dijon mustard
  • 2 tsp fresh lemon juice
  • 1/2 tsp sea salt
  • 1/2 tsp freshly ground pepper

Directions

  1. Quinoa Cooking Instructions: Rinse 1 cup quinoa under cold water until it runs clear. Place quinoa and 1 1/2 cups stock or water in a medium saucepan. Bring to a boil, reduce to a simmer, cover and cook until liquid is absorbed, about 15 minutes. Fluff with a fork.

  2. While quinoa is cooking, put all salad ingredients in a bowl. Add quinoa last. Mix dressing together and add to salad. Toss
