Raspberry Spinach Salad

Ingredients

  • Almond Topping:
  • 1/2 cup slivered almonds
  • 1/4 cup sugar
  • 2 tsp. water
  • Dressing:
  • 1/4 cup sugar
  • 1 1/2 tbsp. poppy seeds
  • 1/4 tsp. paprika
  • 1/2 cup vegetable oil
  • 1/4 cup raspberry vinegar
  • 2 tsp. minced shallots1/4 tsp. worcestershire sauce
  • Salad:
  • fresh spinach
  • 2 cups raspberries
  • Can substitute with strawberries/pecans
  • pear/pomegranite

Directions

  1. Almond Topping:

  2. In frying pan over med. heat combine all ingredients stirring constantly until sugar coats almonds(5-8) mins.

  3. Put on foil to cool. Break apart.

  4. Dressing:

  5. Combine all ingredients & shake well.
