Avocado Shrimp Salad

Ingredients

  • 1/2 c olive oil
  • 1/3 c lime juice
  • 1/3 c finely chopped onion
  • 3 tbs minced fresh cilantro
  • 3 tbs white vinegar
  • 3 tbs minced fresh parsley
  • 2 tbs finely chopped seeded jalapeno pepper
  • 1 1/2 tsp minced garlic
  • 1 tsp salt
  • 1/4 tsp pepper
  • 6 c torn romaine
  • 1/2 lb cooked small shrimp
  • 1 medium ripe avocado, peeled and sliced

Directions

  1. In a jar with a tight-fitting lid, combine the first 10 ingredients; shake well. Divide the romaine among four salad plates; top romaine with shrimp and sliced avocado. Drizzle with dressing.
