Baked Potato Soup

Ingredients

  • 3 Large Baking Potatoes
  • 6 Tblesp thinly sliced green onion
  • 3 Tblesp butter
  • 3 Tblesp all purpose flour
  • 2 teasp chives
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 cups milk
  • 1 1/4 cup American or Colby or Cheddar Cheese
  • 5 Slices bacon, crisp, drained and crumbled

Directions

  1. Wash potatos, prick with a fork. Bake 425 degrees oven 50 minutes. Cut each potatoe length wise. Scoop out white portion of each potato, set aside in a bowl. Discard skin.

  2. Large sauce pan cook 3 tblsp of green onion in butter over medium heat. Stir in flour, chives, salt and pepper. Add milk all at once. Cook and stir 12 to 15 minutes or until thickend and bubbly.

  3. Add the potato and 1 cup of the cheese until melted.

  4. Top each serving with 1/4 cup cheese, green oninon and lots of bacon.
