Roast Beef Quesadillas

Ingredients

  • 1 17-oz refrigerated cooked beef roast au jus
  • 1/4 cup bottled chunky salsa
  • 2 yellow peppers, sliced
  • 4 10-inch flour tortillas
  • 3/4 cup shredded cheddar cheese
  • Fresh cilantro
  • Sour cream

Directions

  1. Preheat broiler. In large skillet combine beef in its juices, salsa, and peppers/ Cook, covered, over medium heat for 10 minutes, stirring occasionally to break up beef.

  2. For quesadillas, spoon some beef mixture on half of each tortilla. Fold tortillas over meat, then fold in quarters. Place folded tortillas on foil-lined baking sheet. Sprinkle cheese on each. Broil 1 to 2 minutes, just until cheese is melted and tortilla begins to crisp. Top with cilantro and sour cream.
