Mexican Peanut Brittle

Serves 5 people

Ingredients

  • 2 chipotle peppers, finely chopped into paste
  • 2 tbsp of adobo sauce from peppers
  • 2 tbsp ketchup
  • 2 tbsp lime juice
  • Salt to taste
  • 1/2 cup brown sugar
  • 1 1/2 to 2 cups of skinless peanuts, dry roasted or regular

Directions

  1. Heat oven to 350 degrees

  2. Prepare glaze:

  3. In sauce pan over medium heat , dissolve brown sugar until a caramel color, remove from heat

  4. Add

  5. Adobo sauce, peppers, ketchup, lime juice, and salt

  6. Combine thoroughly into a glaze

  7. Add peanuts to glaze and mix

  8. Remove mixture to a simplat lined cookie sheet

  9. Spreading mixture to desired thickness

  10. Bake for 30 minutes

  11. Remove from oven and let thoroughly cool

  12. break into chunks

  13. NOTE: substitue hazel nuts, or pistachios or toasted pumpkin seeds, as alternatives
