Queso Fundido

Ingredients

  • 1/2 of medium white onion, medium chop
  • 1 cup chopped tomatos, seeded or not
  • 1-1/2 cups rough copped mushrooms, button white are fine
  • 1 small finely chopped jalapeno pepper, seeds removed
  • 1 cup of medium dark beer
  • 2 cups queso fresco, or to taste
  • Salt and pepper
  • 1 tbsp vegetable oil

Directions

  1. In 12 ’ skillet

  2. Add vegetable oil and mushrooms

  3. Sautee for 2-3 minutes on medium heat, until mushrooms are releasing liquid

  4. Add onion, tomato, and green chile, continue sauteeing for for 2-3 minutes

  5. Salt and pepper

  6. Add beer and cook until liquid in pan is reduced 50%

  7. Cover mixture with desired thickness of cheese, cover skillet and continue on heat until cheese is melted.

  8. Remove from and let sit for 5-7 minutes to firm up a bit.

  9. Slide fundido from skillet onto a serving dish

  10. Slice like a pie into desired pieces

  11. Serve with toasted tortillas
