Pumpkin Pie Squares

Ingredients

  • 3/4 c all-purpose flour
  • 1/2 c rolled oats
  • 1/4 c packed brown sugar
  • 1/2 c butter
  • 1/2 c chopped pecans
  • 1 can (14 oz) pumpkin
  • 1 can Eagle Brand
  • 2 eggs, beaten
  • 1 tsp each, ginger and cinnamon
  • 1/2 c coconut (optional)

Directions

  1. Combine flour, oats and brown sugar; cut in butter until crumbly; stir in pecans.

  2. Press evenly into 9inch square pan. Bake at 350 degrees F for 15 minutes.

  3. Combine remaining ingredients, except coconut. Pour over base in pan; sprinkle with coconut.

  4. Return to oven and bake 25 to 30 minutes or until set.

  5. Serve warm or chilled. Garnish with whipped cream and toasted coconut, if desired.
