Wholemeal Ginger Slice

‘Healthy’ version (?) of recipe similar to Ginger Crunch – yummy!

Serves 30 people

Ingredients

  • Base:
  • 225 g butter, melted
  • 1/2 C golden syrup
  • 1 C soft brown sugar
  • 1 C shredded coconut
  • 1 C rolled oats
  • 1/2 C sesame seeds
  • 1 1/2 C wholemeal flour
  • 1 T ground cinnamon
  • 1 T ground ginger
  • Topping:
  • 100 g butter
  • 3 T golden syrup
  • 1 1/2 C icing sugar
  • 1 t ground ginger
  • 1/2 C chopped pistachios (optional)
  • 1/4 C finely chopped crystallised ginger (optional)

Directions

  1. Base:

  2. Melt butter and golden syrup together, then add to remaining ingredients.

  3. Mix well (quite sticky and soft mixture).

  4. Press into lined 32 × 22cm shallow baking tray.

  5. Bake at 160oC approx 25 mins, until golden brown.

  6. Topping:

  7. Melt butter & golden syrup, add icing sugar & ground ginger.

  8. Cook slowly on medium heat 8 mins, stirring.

  9. Beat well until mixture is light fluffy golden brown.

  10. Do not overheat, as it will set like toffee.

  11. Pour mixture over base, and sprinkle with pistachios & ginger if desired.

  12. When cold, slice into fingers.
