Spinach Lasagna

Serves 8 people

Ingredients

  • 9 lasagna noodles
  • 1 pound ground beef
  • 2 cans (14.5 oz) Italian stewed tomatoes
  • 2 cans (8 oz) tomato sauce
  • 2 cans (13.5 oz) spinach
  • 1 pkg (15 oz) ricotta cheese
  • 3 cups shredded mozzarella cheese

Directions

  1. Cook pasta; drain

  2. Cook meat, tomatoes and tomato sauce in skillet over medium heat

  3. Drain spinach well, squeezing out excess liquid; blend with ricotta cheese

  4. Layer 3 noodles, ½ spinach mixture, 1/3 tomato mixture, and 1/3 cheese in 9 X 12 inch baking dish

  5. Repeat, ending with noodles, tomatoes and cheese

  6. Bake at 350° for 30 minutes or until heated through

  7. Serve with parmesan cheese
