Green Bean Casserole

Ingredients

  • 1/2 c buttermilk
  • 1/4 c whole wheat bread crumbs
  • 1/4 c ground walnuts
  • 1 onion, cut crosswise into rings
  • 1/2 lb baby bella or crimini mushrooms, sliced
  • 1 onion chopped
  • 1/2 t dried thyme
  • 1/4 t salt
  • 1/4 c whole wheat flour
  • 3 c 1 percent milk
  • 16 oz frozen french cut green beans

Directions

  1. Thaw and drain beans.

  2. Preheat oven to 500, coat medium baking sheet and 13X9 baking dish with pam.

  3. Mix buttermilk, crumbs, and walnuts to make batter.

  4. Coat onion rings in it and place on baking sheet.. coat lightly with pam and bake 20 min.

  5. Meanwhile, saute mushrooms, onion, thyme, and salt in cooking spray.

  6. Cook 4 min, stirring constantly.

  7. Sprinkle with flour and cook another minute

  8. Add milk, cook 3 minutes.

  9. Add green beans and stire.

  10. Put in baking dish, top with onions, and cook at 400 for 25 minutes.
