Baked salmon with basil sauce

Ingredients

  • 6 salmon fillets
  • Marinade:
  • 4 tbls olive oil
  • salt & pepper
  • 4-6 leaves of fresh basil
  • 2 cloves of garlic minced
  • 2 tbls lemon juice
  • 2 tbls fresh parsley chopped
  • Green beans:
  • Green beans frozen
  • Cream basil sauce:
  • 9 fresh leaves of basil
  • 1 garlic clove pealed
  • 1romano tomato cut in two
  • 2-3 tbls coconut milk
  • 90g ricotta cheese
  • dash of salt & pepper

Directions

  1. Legg laks i ildfast form

  2. Mix marinade and pour over fish

  3. let sit for 20 min in fridge covered
  4. Preheat oven for 190 degrees celsius

  5. Place two and two salmons in aluminum foil

  6. cover with marinade and seal

  7. Place them in baking dish and bake 40-45 min

  8. 12 min before fish is done start green beans:

  9. Follow instructions on package

  10. Cream basil sauce:

  11. Place ingredients in blender and process

  12. Place fish on plate with green beans and pour over sauce. Hot or cold
