Ingredients

  • 1 big Yellow squash
  • kokos olje
  • 1 onion
  • 4 cloves of garlic
  • handfull cherry tomatoes
  • some white mushrooms
  • 5-7 basil leaves
  • 1 slice of mozarella

Directions

  1. Preheat oven for 190 degrees

  2. Cut the squash lengthwise in half

  3. Seed the halves and place on baking sheet,

  4. cut sides down.

  5. And bake for ca 40 min until you can stick a sharp knife trough it with little resistanse.

  6. Chop onion ang garlic and saute in olive oil
  7. Add the mushrooms and tomatoes

  8. put the chees over at the end

  9. Take squash out of oven and let sit for a few min, take a fork and scoop out the stringy texture
