Vinaigrette for Steamed Vegetables

Ingredients

  • 1/2 tsp Dijon mustard
  • 2 tbsp aged red wine vinegar or sherry vinegar
  • 1/2 cup fruity extra-virgin olive oil
  • salt and pepper

Directions

  1. Mix mustard with vinegar until it is thoroughly dissolved. Add the oil and salt and beat vigorously with a fork or wire whisk. Taste the dressing, and adjust the seasoning. Grind in black pepper.

  2. Toss steamed artichokes, asparagus, broccoli, green beans, greens (spinach, chicory, broccoli rabe) in dressing while still warm.
