Stuffed Peppers

Ingredients

  • 5 large bell peppers
  • 1 cup rice, boiled (measure before cooking)
  • 1 lb hamburger
  • 1 cup shredded cheddar cheese
  • 1 medium sized chopped onion
  • 1 8 oz jar of salsa

Directions

  1. First, boil the rice. Drain it and keep aside.

  2. Cut off the tops of the four bell peppers and parboil them for 4-5 minutes. Add some salt to the boiling water. Drain and keep aside.

  3. Cook the hamburger with the chopped onion until brown.

  4. Add salsa to the meat and onion mixture. Allow to simmer for 15-20 minutes.

  5. Add the rice to this mixture and cook for 15-20 minutes while stirring.

  6. Now add the cheddar cheese into this mixture and allow it to melt into the mixture.

  7. Stuff this mixture equally into the four scooped out bell peppers.

  8. Bake these in an oven at 350 degrees Fahrenheit for around 20 minutes.
