Parsley Buttered Potatoes

Ingredients

  • 1.5 lbs small red potatoes, quartered
  • 2 tablespoons margerine, melted
  • 1 tablespoon fresh parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Directions

  1. Cook potatoes, covered, in a small amount of boiling lightly salted water for 15 to 20 minutes or until tender; drain.

  2. Meanwhile, stir together melted butter, parsley, salt, and pepper; gently toss cooked potatoes wit butter mixture until potatoes are coated.
