Texas Caviar

Ingredients

  • 1 can garbanzo beans, drained
  • 1 can black eyed peas, drained
  • 1 can yellow hominy, drained
  • 1 can black beans, drained
  • 1 can whole kernel corn, drained
  • 1 cup cilantro, diced
  • green peppers, chopped
  • 2 tomatoes, diced
  • 1 cup black olives, sliced

Directions

  1. Mix garbanzo beans, black eyed peas, yellow hominy, whole kernel corn and black beans.

  2. Add cilantro, tomatoes, black olives and green peppers.

  3. Pour a bottle of non-fat Itailan salad dressing over all.

  4. Let ‘stew’ over night or at least 4 hours.
