Holiday sweet potatoes

(from Brenda Ring’s recipe box)

Ingredients

  • 4c. Mashed sweet potatoes
  • 1c. Sugar
  • 1/2 stick of butter
  • 2eggs beatin
  • 1t. Vanilla
  • TOPPING
  • 1can pineapple
  • 2beaten eggs
  • 1c. Sugar
  • 1T corn starch

Directions

  1. Cook topping ingredients until thick.

  2. Put on top of sweet potatoes.

  3. Bake at 350for45 to 60 minutes.
