“Healthy” Chocolate Chip Cookies

note: 1 cup oats does not equal 1 cup oat flour

Ingredients

  • 1 cup oat flour (grind rolled oats in blender)
  • 1/4 cup white whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • pinch of salt
  • 2 tablespoons cornstarch
  • 1/4 cup coconut oil
  • 1/4 cup reduced calorie margerine
  • 1/4 cup dark brown sugar
  • 2 tablespoons turbinado sugar
  • 3/8 cup mashed banana
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 cup organic chocolate chips

Directions

  1. Combine margerine and coconut oil in mixer.

  2. Add sugars and banana.

  3. Cream.

  4. Add egg and vanilla.

  5. Whisk remaining dry ingredients.

  6. Slowly add to wet mixture.

  7. Stir in chocolate chips.

  8. Bake at 350 for 8 minutes.
