Ingredients

  • 1.5 cups almond flour.
  • 1/4 ts baking powder+same amount of salt.
  • 1 tbls coconut oil or grapeseed oil.
  • 1 large egg
  • 2 tbls flaxeed meal(linfrømel).
  • Tomatsaus:
  • 1 stor tomat
  • 2 tbls tomato paste.
  • 1 whole head roasted garlic
  • 1/4 of an onion.
  • fresh basil and fresh thyme, salt & pepper.
  • 1ts olive oil.
  • Topping:
  • Mushrooms, Mozarella, fresh basil leaves

Directions

  1. Preheat oven for 180 degrees celsius.

  2. Mix all the dry ingredients for the pizza crust together in a large bowl.

  3. In a medium size bowl whisk egg and coconut oil until smooth.

  4. Combine the dry with the egg mix until dough is firm and slightly sticky.

  5. Press the dough into a medium size jernpanne and stick it in the oven for 15 min. No need to grease skillet if the skillet is well seasoned. Seasoning a cast iron skillet is easy. Grease every inch of the inside of the skillet very well with vegetable oil and bake in oven at 180deg for an hour. Let it cool and wipe the inside with a paper towel. This should last for a while, you don’t have to do it often.

  6. In the mean time start tomato sauce.

  7. Its great to have some roasted garlic in the fridge because they take time;

  8. Take a whole head of garlic, cut in half.

  9. It doesn’t have to come apart, but you should be able to grease the middle.

  10. 1 tbls pr garlic head, and salt all over.

  11. Wrap in baking paper and then aluminum foil.

  12. Plaze them in a preheated oven at 190 deg for 50 min.

  13. Cut the onion and tomatoest so you can put them in a blender.

  14. Throw tomatoes, onion, tomatopaset and garlic into vitamix hot soup function 4 min. If you don’t hav vitamix you have to cook the sauce in a saucepan.

  15. crush fresh herbs and put into sauce.

  16. Once the sauce and crust is ready, pour the sauce over the crust in the skillet.

  17. Top it with some mushrooms and stick it back in the oven for 3 min.

  18. put on mozarella and stick it back for 5 min.

  19. Take it out of the oven and sprinkle fresh basil leaves on top
