Microwave Mushroom Meatloaf

This microwave meatloaf is better than any baked meatloaf I have ever had. My hubby isn’t a mushroom fan, so I just leave them out of his half. You can leave them out all together, if you like.

Ingredients

  • 2 slices Fresh bread (cut into cubes) or 1 cup of TVP for a low carb version
  • 1/3 cup Milk
  • 1 tbsp Worcestershire sauce
  • 1/2 cup Parmesan (powdered)
  • 1/2 tsp Garlic powder
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 2 Eggs
  • 2 lbs Ground beef
  • 1 can Drained mushrooms
  • 4 tbsp Catsup
  • 4 tbsp Brown sugar splenda
  • 2 tsp Mustard

Directions

  1. In a large bowl combine bread cubes, milk, Worcestershire sauce, parmesan, garlic powder, salt & pepper. Add eggs & mix. Add ground beef, mushrooms & combine with hands. Put into a microwave bundt pan (or cake pan with upside down glass in the center).

  2. In separate bowl combine all ingredients for glaze and mix well.

  3. Top meatloaf with glaze and cook for 15 minutes on high. Check and continue cook in 5 minute intervals until corners are done. When the meat is done, poor out excess grease & serve.

  4. Note: I use a turkey baster to suck out the excess grease.
