Nutted Wild Rice

Ingredients

  • 1 cup raw wild rice
  • 5 1/2 cups chicken stock
  • 1 cup shelled pecan halves
  • 1 cup yellow raisins
  • grated rind of 1 large orange
  • 1/4 cup chopped fresh mint
  • 4 scallions thinly sliced
  • 1/4 cup olive oil
  • 1/3 cup fresh orange juice
  • 1 1/2 tsplt
  • Freshly ground black pepper to taste

Directions

  1. Rinse rice in a strainer under cold water thoroughly

  2. Place rice in med. saucepan,add stock and bring to a boil

  3. Simmer uncovered 45 mins. After 30 mins check for doneness, rice should not be too soft

  4. Place a thin towel in a colander and drain rice

  5. Place rice in a bowl

  6. Add remaining ingredients and toss gently

  7. Adjust seasonings to taste

  8. Let mixture stand for 2 hours

  9. Serve at room temperature
